I made this recipe for the first time a couple of weeks ago and posted the photo in my Instagram stories. People overwhelmingly wanted to know the recipe…which is SUPER simple…so here it is!
I make a lot of salmon at home- it is such a healthy fish that is full of omega-3’s and has incredible anti-inflammatory properties. If you aren’t already on the salmon bandwagon….get on it! It’s a nutritional powerhouse and does wonders for your skin and hair too!
So, I wanted to find a way to change it up from the normal salmon recipes I cook and make something a little different and full of flavor. I love strong, Mediterranean flavors so a pesto situation seemed like a good idea. And balsamic drizzle- always love a little balsamic drizzle.
But the problem was I didn’t have any basil to make my Classic, Dairy Free Pesto Sauce with, but I did have a lot of cilantro and I figured why not! I made my normal pesto recipe, but I used cilantro instead of basil and WOW, it is really good. It almost has a chimichurri taste to it when cilantro is used and I am into it! It goes so well with the balsamic drizzle too!
Now, you can totally follow my lead and make the pesto at home, OR you can buy pre-made pesto at the store and doctor it to make it fit this recipe. I have done it this way once and it was just as good. I bought a jar of pesto from Trader Joe’s, added 3/4 cup of chopped cilantro to it in the blender, blended and voíla! Pesto with a cilantro kick.
The balsamic drizzle I use is also from Trader Joe’s and it is so good and so easy to use.
Cilantro Pesto Salmon with Balsamic Drizzle
1 lb Salmon fillets, skin removed
3 tablespoons cilantro pesto *read above to make it correctly!
Balsamic glaze drizzle- I don’t measure this, I just zig zag it…photo below for reference!
1/4 tsp sea salt
Heat oven to 400 degrees F and spray a glass baking dish with cooking spray. Sprinkle salt over salmon evenly and place them into the baking dish. Next, top the fillets with the pesto sauce and spread to coat. Drizzle the balsamic glaze on the salmon, zig-zagging back and forth.
Cook the salmon in the oven for about 15-18 minutes, or until cooked to your liking.
For the ultimate pesto dinner, serve this with my pesto zoodles!
