This smoothie bowl is SOOO good…strawberries and cream, super healthy and it tastes like dessert, so duh…it’s amazing.
On mornings or afternoons when I am hungry and craving something a little more than just a smoothie, I opt for a smoothie bowl. It provides a lot of protein and nutritious fruits that give me energy in the morning, but also really fills me up and keeps me going.
This recipe makes one BIG smoothie bowl…so big that I often split it between myself and Ben or eat half and save the rest for later.
Feel free to add some additional toppings if you like- granola or coconut flakes would be amazing!
If you want to sub something for the coconut cream- use some greek yogurt!
Strawberries and Cream Smoothie Bowl
1/2 cup unsweetened vanilla almond milk (plus more if you need it!)
1 cup frozen strawberries
1/2 scoop vanilla protein powder
1/2 very ripe banana (fresh or frozen works)
drizzle of agave or honey (about 1/2 tablespoon)
2 tsp chia seeds
sliced strawberries (for topping)
2 tablespoons coconut cream (from a can) blended well so it has the consistency of cream so you can drizzle it on top
Put the almond milk, strawberries, protein powder, honey and 1 tsp chia seeds into your high power blender. Blend on high until the mixture is a thick slushy yumminess. It may help to add only a few frozen strawberries at a time, to make the blending process easier…also, add a but more almond milk if its TOO thick. Once blended, put it in a bowl and top it with strawberries, the remaining 1 tsp chia seeds and drizzle the coconut cream on top. If your coconut cream is a mixture of solid and liquid (a lot of times it is like that out of the can) just put it in the rinsed out blender and blend for 20 seconds or so to turn it back into a cream.
Serve immediately and enjoy!
