follow url It’s that time again! The Olympics begin in just 2 days and the opening ceremony is always something to remember. I love any excuse to throw a party so thats exactly what I am doing this year- rooting for team USA, with friends, cocktail in hand.

Made the classic way, its made with Brazilian liquor Cachaça and lots of fresh lime juice and sugar. I wanted to put a little spin on it, and of course make it a little bit “skinnier” for myself and my friends. My spin on The Caipirinha created: The Skinny Watermelon Basil Caipirinha.
see Watermelon juice is seriously having a moment- it’s summery, super hydrating, it’s anti-inflammatory and SO YUMMY. Basil is such a great compliment to watermelon…and I love putting it in cocktails, so I thought it was a perfect way to put a modern, summery twist on a classic drink.

Skinny Watermelon Basil Caipirinha
Makes 4 cocktails
2 cups of fresh watermelon
4 oz Cachaça
Juice of 3-4 limes ( I like mine very lime heavy!)
2 tablespoons simple syrup or agave nectar
handful of fresh basil (some to muddle and some for garnish)

In a pitcher, muddle the watermelon to extract all the juicy goodness, then add most of the basil and muddle that in with the watermelon until they no longer resemble leaves. Next, add the lime juice, simple syrup and Cachaça. Mix well. Fill 4 glasses with ice and pour mixture! I like to strain mine a little so only a little bit of the watermelon and basil pulp goes into the glass. Garnish with a basil leaf, and done! Enjoy!
