Baked Omelette Muffins


Protein Packed Grab and Go Snack!

I really love a healthy, protein packed snack that I can easily grab from the fridge without too much effort- sometimes I just don’t feel like “preparing” something you know?

Eggs are always a great, healthy snack….so I wanted to find a way to make an easy to eat egg snack that wasn’t a hard boiled egg (which are great, but get a little boring!)

I love omelettes, so I thought mini omelette muffins were SUCH a great idea.  Small enough to store, grab and go…but good enough to eat for a quick breakfast or post-workout snack.


omelettemuffins2I loaded them with turkey bacon, red pepper, onion and spinach- which are my favorite breakfast omelette ingredients.  You can easily put other items in these too…whatever your favorite omelette ingredients are, have fun with it.

They are very healthy- I use 6 whole eggs and 6 egg whites to lighten them up a bit, and turkey bacon to keep them low fat.  These are SUPER EASY to make too!  Mix, pour, bake, done!

I store them in the fridge, in a container for up to 3-4 days after cooking, although they rarely last more than 2 in our house!


Baked Omelette Muffins



6 large whole eggs

6 large egg whites

4 slices turkey bacon, cooked and chopped

1/4 cup chopped red pepper

1/3 cup cooked, chopped, drained spinach (put raw spinach in microwave for a minute to cook it, then drain it)

1/4 cup chopped sweet onion

salt and pepper to taste

cooking spray



Heat the oven to 350 degrees and spray a muffin tin with cooking spray- coat very well!!

In a large bowl whisk together the eggs and egg whites until well combined.  Then add in all the other ingredients. Salt and pepper to taste.

Pour mixture into prepared muffin pan (12 muffins)- to do this use a large spoon OR use a measuring cup with a “pour”spout feature.  Cook them in the oven for 20-25 minutes, or until cooked through.
