Carrot Cake Smoothie Bowl


Craving a little something sweet and decadent??  A post dinner or late night snack, but don’t want to totally undo the healthy day you’ve already had??  Been there!  I’m sure a lot of you have too (I mean, we are only human, right?!)

One of my favorite desserts is…CARROT CAKE! Yum, LOVE.  So when I recently got on a smoothie bowl kick, I decided I should try to make my favorite dessert into something tasty, easy and actually healthy!  I often blend this up for breakfast, but I do tend to love it as an evening treat.  When I make it for breakfast, I put about half a scoop of vanilla protein in- SO good and so healthy and filling.  Here’s the how to on this delicious creation!



1/2 large banana
1/2 cup organic, unsweetened carrot juice
A few ice cubes ( I usually use 3-4)
2 medjool dates, pitted and chopped (I like to soak the dates for 5-10 minutes before chopping and blending because it makes them softer)
¼ tsp vanilla extract
¼ tsp ground cinnamon, plus a little extra on hand for topping.
¼ cup walnuts
2 Tablespoons raisins
3 Tbsp. shredded coconut (for topping!)

Blend the banana, carrot juice, ice, 2 of the dates, vanilla, and cinnamon until smooth. Transfer to a bowl and top with the walnuts, coconut, raisins, and a little sprinkle of cinnamon for good measure!  I like to make it look pretty- it ‘s nicer to eat when it’s nicer to look at!

    Looks delicious, i also love carrot cake. Will have to give this a try. My wife and I avoid dairy so this would be a great way to get a carrot cake dessert without worrying about a dairy substitute.
