Pumpkin Pie Overnight Oats

I love overnight oats…whether I have them for breakfast or for a mid-day snack, they always satisfy me and keep me full.

I actually bring a mason jar, rolled oats and chia seeds with me when I go away for work so I can make them in my hotel room!  I add some cinnamon and whatever fruits and nuts I have on hand so that I can have an easy grab-and-go snack or breakfast.  It makes eating while away from home a little more comforting and healthy.

Since it is officially fall and pumpkin/gourd season is in FULL swing, I thought it was the perfect time to share this pumpkin pie version of my overnight oats.

To be honest, I make this all year round haha!  I love pumpkin so much, BUT this time of year it just feels right.  I was going to call it pumpkin spice overnight oats, but it is SO much more than that!  It tastes like pumpkin pie and it is far better than basic pumpkin spice.

Additionally, on a healthier note, pumpkin adds a lot of vitamins and fiber to the already health-packed overnight oats!  Pumpkin is this season’s superfood, so load up on it while it’s around!

This recipe typically yields 4-6 servings…it sort of depends on how hungry you are when you dig into the jars!  Sometimes I will eat the whole jar, and other times I will have a third a jar- haha!

*Serving in a wine glass makes you feel fancy AF.


Pumpkin Pie Overnight Oats


 

Ingredients:

1 1/2 cups rolled oats

1 tsp pumpkin pie spice

1 tablespoon agave nectar

2 1/2 cups unsweetened vanilla almond milk

1 tsp vanilla extract

2 tablespoons chia seeds

2/3 cup plain pumpkin puree (not sweetened pumpkin pie filling!!)

2 tablespoons raisins (optional, but I think they make it amazing)

1-2 tablespoons stevia (optional- I like adding it because it makes these oats taste sweet without adding any extra calories)

Chopped toasted pecans for topping

 

Directions:

In a large bowl, mix all the ingredients, other than the chopped pecans, together well.  Then pour the mixture evenly into two mason jars with lids.  Shake them up and put them in the fridge overnight- when you wake up in the morning, the oats will be soft, gooey and ready to enjoy.  I spoon some out, seal the jar back up and just dip in whenever I want some more.  Top with some chopped pecans and a little more pumpkin puree if you feel a little jazzy!

    I have never tried overnight oats before and this was AMAZING! It has the pwefect amount of pumpkin in it to really feel like a fall food!
