3 Ingredient Watermelon Summer Cocktail

Happy Labor Day Weekend!!

Summer is coming toward a close…leaving us all with this one last long weekend to play, swim, sunbathe and BBQ before Fall starts to roll in.

Although, over here it feels like fall is nowhere to be found right now!  Here in LA it is blazing hot- it is 104 degrees today and it has been this way for the whole week!  We are basically all just trying not to melt out there…which is a perfect excuse to make a refreshing cocktail to toast long weekend.

And if you don’t live in the US, go ahead and still toast with this delicious, summery cocktail…you deserve it!

This is SUPER simple to make, which I love, and it has no added sugar.  The only sweetness comes from the fresh watermelon, which also has vitamins and anti-inflammatory properties so it’s one of the best ways to sweeten a cocktail.  And it keeps your cocktail low calorie!

The fresh lime juice adds a zesty flavor and the vodka/tequila gets the party going.  Go ahead and make this “virgin” by adding a splash of club soda in place of any alcohol- still so delicious!

I usually use vodka in this recipe, but tequila also works really well.  One time I made it with tequila and sprinkled some Tajin on the top of the glass and it was SO good!

This recipe makes a pitcher of cocktail- enough for a small party.  Of course, you can always double it if your fiesta gets a little rowdy!

It also saves really well in the fridge, so any leftovers will be good when kept refrigerated for a few days.


3 Ingredient Watermelon Summer Cocktail


Ingredients:

7-8 cups of cubed watermelon (I used a whole small, seedless watermelon and it yielded 7 cups of cubes when I chopped it up!)

1 cup of fresh lime juice

1 1/3 cups vodka or tequila (I used vodka)

 

Directions:

In a high powered blender, blend the watermelon chunks until it is all in a juice-like consistency.  No large chunks left!  Next, use a wire strainer to strain the “watermelon juice” and remove any leftover pulp.  I like to place a large bowl in the sink and our the watermelon liquid through a strainer and into the bowl, stirring it through as I go.  Discard and leftover pulp that the strainer catches.  Some pulp will get through, but that’s totally fine!

Pour the strained watermelon juice into a pitcher, then add the lime juice and vodka.  Stir well and serve over ice.  Enjoy!

    I think it sounds awesome, i bet a splash of pineapple juice for those who want it sweeter would also be good! Thank u for these Kat.😉
