In honor of Cinco de Mayo just a couple of days away…let’s give a little love to the Margarita!
I love a good spicy Margarita!
Other than wine (duh!) Margs are my go to drink when I go out. But I don’t go for the standard version. Too much sugar and omg those give me SUCH a hangover. Even after just one!! I know, I know..lame but whatever.
That’s why I am a huge fan of the skinny margarita (thanks Bethenny Frankel!)
I usually get mine with just a smidge of agave, not too much because I really don’t like it sweet. I like it with tons of lime juice…super tart and just a touch of sweet to cut the acid.
Oh and the salt. Salt fiend for life over here!! I always get it with salt, even though it’s not the healthiest thing. Gotta live a little!
And if I am going to have a margarita, I want it to be spicy. Jalapeños are my preference but I have certainly been known to improvise in a pinch. If a bar doesn’t have any fresh jalapeños, I will have them add a dash of tabasco sauce. MMMM! Does the trick! But if you can get the real thing, get the real thing.
I like to use silver tequila, because I like the taste better. Patron is my favorite, but there are plenty of great options out there! Make sure to use a good quality tequila- it’ll taste smoother and you won’t wake up with a killer headache (unless you have like 5 of these, then you’re screwed either way!)
The Perfect Skinny Jalapeño Margarita
Serves 2 *for more, just double or triple the recipe!
1/2 cup fresh-squeezed lime juice or a bit more ice you like it extra lime-y (no bottled lime juice!!!)
1 green jalapeno pepper, sliced thin
4 ounces silver tequila
1-1.5 ounces agave nectar (I like it less sweet, so I put 1 ounce for me)
2 tablespoons sea salt for the rims
2 lime wedges
In a glass pitcher (or whatever pitcher you like honestly) muddle 1/2 the jalapeño and the lime juice with a muddler until it looks pulpy and fully smashed. If you don’t have a muddler, you can use the back of a wooden spoon. Add the tequila and agave to the pitcher and mix well with a wooden spoon until agave is dissolved. Pop a few ice cubes (3) into the pitcher while you prep the salt on the rims of the glasses. Pour the salt on a small flat plate, wet the rims of each glass with a lime wedge and then dip the glasses in the sea salt, wiggling around until the entire rim is covered, shake off excess. Add ice to both of the salted glasses, then pour the margarita from the pitcher equally into the two glasses. Top with a couple slices of jalapeño and serve immediately!
