PB&J Smoothie Bowl

I love a yummy smoothie bowl.  Full of protein, antioxidants, delicious nutrient-packed fruits, and TONS of yummy flavors.  I mean, it’s basically dessert in a bowl for breakfast, and I am SO down with that.

I recently had a Peanut Butter and Jelly Protein smoothie at my favorite smoothie shop and I just fell in love, so I obviously had to recreate it at home.

I decided to make this into a smoothie bowl, because it’s just fun…but you can totally add a little bit more almond milk and make this a smoothie for a glass instead.

I use Peanut Butter Powder to add the PB taste, with very few calories.  If you haven’t tried Peanut Butter Powder yet, you have to.  It is amazing and is about 80% fewer calories than regular peanut butter…I wrote a whole post about it here- check it!

For the Jelly flavor, I use a combo of blueberries and raspberries…and a little bit of banana adds just the right amount of sweetness.

 


PB&J Smoothie Bowl


Ingredients

3/4 cup unsweetened almond milk

1/2 scoop vanilla protein powder (optional)

1/2 tsp vanilla extract

1 tablespoon Peanut Butter Powder

1/3 cup frozen raspberries

1/3 cup frozen blueberries

1/2 frozen banana

Toppings: coconut shreds, chia seeds, Better N Peanut Butter smear, raspberries (or whatever else you like!)

Instructions

In a very high power blender (I swear by my Vitamix!!) combine the almond milk with the protein powder (if using), PB Powder, and vanilla extract.  Blend until combined.  Next add the frozen fruits and blend again until smooth.  You may need to stir it a few times in between blending to make sure it all gets smooth.  Pour into a bowl and top it with your favorite toppings!
