Oatmeal Raisin Cookie Overnight Oats

Happy Monday from Los Angeles!!

I wrapped my latest movie that I was shooting up in Palm Springs on Saturday night (yes, the bikini model role one!!), and I am back in LA for a while until I start shooting my next movie.

The remainder of the shoot went so well- I had so much fun!  The bikini scenes went well- I felt great, ready and prepared.  Tight and toned!  And the whole movie should be a super fun laugh.

Saturday night, after wrapping, Ben and I went out to dinner where I had a giant spicy margarita, bread from the bread basket and a big burger with bacon that I savored every single bite of.  Ugh!!  It was so worth the “bikini model diet” for the past 4 weeks!!

I am back to normal healthy eating now…no juice cleanses in my near future (I hope)!  Just clean, healthy meals and lots of heart pumping exercise…basically my normal every day life.

And this recipe falls right in line with that.

I love overnight oats.  They are so easy to make, super healthy and filling…and they are an amazing blank canvas to flavor however you like.  There are SO many ways you could flavor them, and I love playing around with that.

I do love my Coconut Cashew Overnight Oats, but I have recently been making a more classic spin on oats- using a classic flavor I can’t get enough of.

OATMEAL RAISIN COOKIES

I mean…who doesn’t love them?!?  And you can get that same flavor, in a delicious, healthy, filling breakfast…total win!

I like to top mine with a few raspberries or blueberries, some chopped almonds… and of course I mix in a little bit of unsweetened coconut because I can’t make overnight oats with it.  I have tried, and it is literally impossible for me not to.  It’s like some force pulls my hand toward the coconut and it’s out of my control. (hehe)

Oh!  And I also use golden raisins in this recipe because I like them a little better than normal raisins.  They are plumper and a bit sweeter, which really compliments the oats well.

This recipe will make about 3-4 servings (depending on how hungry you are each morning!)


Oatmeal Raisin Cookie Overnight Oats


Ingredients:

1 cup old fashioned rolled oats

1 1/3 cup unsweetened vanilla almond milk

2  tablespoons chia seeds

2-3 tablespoons honey or agave (depending on how sweet you like it!)

1 tsp ground cinnamon

1/4 cup golden raisins (roughly chopped to release sweetness)

2 tablespoons shredded, unsweetened coconut

1/2 tsp vanilla extract

pinch of sea salt

Toppings (optional): chopped almonds, raspberries or blueberries

Directions:

In a large bowl, combine the oats, almond milk and chia seeds.  Mix well.  Then add in your honey, cinnamon, raisins, coconut, vanilla extract and pinch of salt.  Mix again so it is all combined well.  From here, you can either cover the bowl and refrigerate it overnight, OR distribute the oats into 2-3 mason jars and then scoop out your portion for breakfast in the morning.  If you like to grab and go, split this into 4 mason jars.  Let them sit overnight and keep refrigerated until you eat!  Enjoy!
