Grilled Pizza- Two Ways

Pizza.  It’s having a moment, a very long moment.  Who doesn’t love it?? Honestly, I’d be surprised to hear of anyone who doesn’t love it.

I am all about healthy eating…but I am also ALL about balance.  You can’t spend every day of your life eating kale salads and egg whites [[how boring would that be?!]]

I believe that in every healthy lifestyle, deprivation is fatal and moderation is key- indulge in moderation and you’ll stay healthy, happy and motivated.

OK….so is pizza the healthiest food choice? No, definitely not…BUT it isn’t the worst…AND if you make it at home, it’ll be less fattening and a little healthier than the average pizza you get at Joe’s on the corner.  At home, you can control the amount of oil, fat, and cheese that goes into your indulgent pie.   AND the thickness of the dough is a huge part too- at home you can roll it thin, so you’re getting less carbs per bite…which equals…more bites! YAY!

We have pizza night usually once a week or once every 2 weeks at home.  It’s a favorite at home with us because it’s fun to make and there are endless variations!  We have our pizza with a big healthy salad on the side.  And Puffin is OBSESSED with cheese so he loves pizza night because he always gets a scrap or two 😉

In my quest for the perfect at home pizza, I discovered grilled pizzas- it takes it up a dozen notches…and turns your pie into a gourmet pizza

To make a grilled pizza, you roll out the dough, heat up the grill or a grill pan (or even a normal skillet works too in a pinch) and grill the dough on both sides to create a crispy, golden crust- this makes sure your dough stays soft on the inside and crispy on the outside.  And it looks rustic and cool so it’s great for entertaining!

I made it two ways:

One with Caramelized Onions, Prosciutto and Goat Cheese

The other a Classic Margherita Pizza, with a grilled twist

Caramelized Onion and Prosciutto Pizza 

Ingredients:

Pizza dough in a ball a bit smaller than a tennis ball

1/2 sweet onion, sliced

1 tablespoon olive oil

3-4 slices of prosciutto

1/4 cup goat cheese, crumbled

1/4 teaspoon lemon zest

salt and pepper

Directions:

Heat your oven to 400 degrees. Heat a large skillet on medium high heat, add olive oil and then add slice onions.  cook for 4 minutes, then add a sprinkle of sea salt and turn the heat down to medium and continue to cook until caramelized.  While the onions are cooking stretch out the pizza dough with your hands until it is as thin as you can get it without ripping.  You can even use a floured rolling pin to get it nice and and even.  Heat your grill pan on high heat and spray with cooking oil.  Once the pan is hot, place dough on grill pan and cook for 3 minutes, then flip and cook for another 3 minutes.  Transfer dough to a baking sheet lined with tin foil.  Next, spread cooked onions on the dough and then top with prosciutto and then goat cheese.  Top with some black pepper and bake in the oven for about 6 minutes, or until the cheese is melty and a bit browned.  Once cooked, top the pizza with some fresh lemon zest and serve!

Grilled Margherita Pizza

Ingredients:

Pizza dough in a ball a bit smaller than a tennis ball

1/2 cup of your favorite tomato sauce

fresh basil leaves

2 tomatos, sliced

Mozzarella cheese, thinly sliced (4 slices should do it)

salt and pepper to taste

Directions:

Heat your oven to 400 degrees. Stretch out the pizza dough with your hands until it is as thin as you can get it without ripping.  You can even use a floured rolling pin to get it nice and and even.  Heat your grill pan on high heat and spray with cooking oil.  Once the pan is hot, place dough on grill pan and cook for 3 minutes, then flip and cook for another 3 minutes.  Transfer dough to a baking sheet lined with tin foil.  Next, spread sauce on the dough evenly and then top with fresh basil leaves, sliced tomatoes and mozzarella cheese.  Top with some black pepper & a bit of seat salt and bake in the oven for about 6 minutes, or until the cheese is melty and a bit golden.  Enjoy!
