Skinny Sweet Potato Fries

I LOVE sweet potatoes..and I LOVE french fries…so naturally I love sweet potato fries!

You’re average sweet potato fry from a restaurant, although they do have more nutrients in them than an ordinary white potato, they are filled with oil and fat…and just generally unhealthy.  “Frying” the fries sort of cancels out the health benefits of eating sweet potatoes in the first place.  I love to make sweet potato fries by baking them in the oven with spices- they have a lot of flavor, they are crunchy…and they are healthy!  Hence the name “Skinny Fries”!  Oh, and they are a total snap to make.  Just a few steps.  We make these a couple times a week and I often play around with spice combos, but this garlic, salt, pepper and thyme combo is still my good old favorite!

Ingredients:

3 medium sweet potatoes, peel ON and sliced into fry size strips

1-1.5 tablespoons coconut oil (in liquid form)

1 teaspoon sea salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon dried thyme

Coconut oil cooking spray to prepare the pan

Instructions:

Heat the oven to 450 degrees F, and line a flat cookie sheet or two (depending on how many fires you are making!) with foil and spray with cooking spray.  In a large bowl, toss the sweet potato fries with the coconut oil until well coated.  Sprinkle in all of the spices, including the salt, and toss again until all the fries are evenly coated.  If you think a little more spice needs to go in because its not all evenly coated, got for it! Eyeball it, that’s what I always do!

Once all the fries are nicely coated and spiced up, place them on the prepared sheets- careful not to overlap fries!  Try to make a space for each fry to hang on its own, this will ensure a crispier fry! Once they are all evenly spaced, put them in the oven and cook for about 20-30 minutes, or until they are tender and golden brown…with a little crisp to the outside!  Everyones oven is different, so I suggest checking them at 20 minutes, and then going from there.

Let them cool for 5-10 minutes before serving!
